Layered in Puerto Rican history is the art of roasting pigs. It is the national dish of Puerto Rico, and is called “Lechon Asado” meaning pig roast. You will find restaurants all over the island selling roasted pig and displaying them in the front windows slowly turning on the spit.
 
Our dad has been roasting pigs since he was a child in Puerto Rico. After joining the Army in 1952, he brought that tradition with him to the mainland. After he had children, the three of us would take turns helping him roast the pig over the spit. That of course was way before he attached an electric motor making the job forever easier!
 
Our family’s seasoning was developed as so many things are – out of necessity. Our dad could not find what he needed to season the pig at the local store. Nothing he found was the right combination or consistency, so he created his own recipe. He has been using this seasoning for over 60 years, and now he is bottling it – much to the delight of his family and friends.
